Find beetroot seeds in village chests, dungeon chests, and mineshaft minecart chests, or harvest them directly from beetroot plots in village farms.

Prepare hydrated farmland
Till dirt or grass with a hoe next to water (within four blocks) so the farmland stays hydrated, and keep a light level of at least nine above it.

Plant and grow the crop
Right-click the tilled soil with beetroot seeds. Beetroot passes through four growth stages; bone meal speeds it through these stages instantly.

Harvest the beetroot
Break a fully grown beetroot plant to collect one beetroot plus zero to three seeds, then replant the seeds to keep the patch going.

Eat or craft the beetroot
Eat beetroot raw for one hunger point, combine six beetroots and a bowl for beetroot soup worth six points, or craft one beetroot into red dye.
Beetroot restores only one hunger point raw, far less than carrots or potatoes, so most players keep a small patch and grow it mainly for soup, red dye, or breeding pigs.
